This is not an extract but actual finely ground cochineal bugs that we import directly – hence the excellent price and no adulterations. Cochineal bugs live on prickly pear cactus pods and are famous for their potent and brilliant red dye. Used since ancient times in the American Southwest, meso-America and down through the Andes and then as a key trade item after colonization. Cochineal can give a range of colors depending on pH as well as color shifting additives such as cream of tartar yielding everything from a classic scarlet red (think British Red Coats or Santa Claus), to burgundies and purples. Cochineal Paste:
It takes two extractions to get most of the cochineal color.
- 8 parts cochineal to 100 parts water for each of the two extractions.
- Bring cochineal and water to a rolling boil for 2 minutes.
- Filter the liquid and return bugs to the pan.
- Repeat with another 100 parts water.
Color shifts:
• For a classic red, add 8 parts cream of tartar.
• For purple, add a tiny pinch of ferrous sulphate.
To thicken:
Add 1 1/2 parts gum tragacanth.
